1lb. of ground beef 1/4cup chopped onion 1 can(16oz.) refried beans 1 can(151/2oz.) chili beans 1 can9141/2oz.) drained Mexican stewed tomatoes 1 cup salsa 1 can (4oz) chopped green chilies 1 pk. reduced sodium taco seasoning 1 teaspoon dried oregano 1 teaspoon ground cumin 1/4 teaspoon garlic powder 1-1/4 cups of shredded Monterey Jack cheese 1-1/4 cups of shredded mozzarella cheese 3/4 cup small curd cottage cheese 3/4 cup sour cream (divided) 9 lasagna noodles,cooked,,rinsed and drained
In a Dutch oven cook beef and onion over med heat; drain. Stir in the beans, tomatoes, salsa, chillies and seasonings. In a bowl, combine Monterey Jack and mozzarella cheese, set aside 1 1/2 cups. Stir cottage cheese mixture. Spread 1 cup of meat sauce into a greased 13in x 9 in x 2 in baking dish. Layer with 3 noodles, and 1/3 of cottage cheese mixture and meat sauce. Repeat layers twice. Cover and bake at 350 degrees for 1 hour. Uncover and spread with remaining sour cream. Sprinkle with reserved cheese. Bake 10 - 12 minutes or until cheese is melted. Let stand for 20 minutes before serving.
** Tip : Best served with Ice Cold Beer! * Chilies may be left out . Will not ruin the taste!
