Does anybody have a good recipe for homemade picante or salsa? Everyone I ever found has vinegar, so I assume it needs vinegar to help preserve it. But we hate that vinegar taste that we don't get in store bought.

I have a friend that makes really awesome salsa, and I don't recal a vinegar flavor to it, so I'll aks her for her recipe, and post it here. Dave

This Fresh Salsa recipe is for a large batch (6 quarts) but you can make it smaller:
20 cups cut up tomatoes (I use food process or blender) 3 cups Bell Peppers (or less) 2-3 garlic cloves minced 4 jalapeno peppers with seeds 1 cup vinegar (may want to use less if your not a fan of vinegar...I love it) 6 TB salt 1/4 cup sugar 1 1/2 cups chopped onion 3/4 cup chopped fresh cilantro
This recipe can be canned and stored, but it is better fResh, I've had it both ways and can say that canned it is still better than most Salsa I've ever Eaten. Enjoy.
