There are a couple of things I've always been told about turtle that I've found are false. The first is I've always heard that Softshell didn't taste as good as snapping turtle. I can honestly say that I doubt anyone could tell the difference if challenged to do so. Both are fantastic tasty eating. I will be hard pressed to ever turn loose another large softshell, they are really good.
The second thing I've always been told is that if you don't de-bone the meat and cut it samll, it will be tough and hard to eat. I hate the amount of meat that is lost when trying to de-bone so I tried just cooking a whole leg like I would a piece of chicken. It was easily as tender as a peice of chicken. No need to debone and cut up the meat small that I can see.

I always thought that turtle was turtle. I have never cooked it but I would think that smalller pieces would be more tuff to eat.

Never ever ate turtle. I've eaten frog legs, rattlesnake, buffalo meat. Can't remember what other odd things. I've never ate rabbit or squirrel either.

I met his pet turtle Friday night.. His name is Al. Dave has been feeding him every chance that he gets. Took some pics and will have to put them up on here.
