This recipe was ok. Nothing outstanding, just do-able.
Mini Pumpkin Bread
1 2/3 cups sugar 2/3 cup vegetable oil 2 tsp vanilla 4 eggs 1 18 oz can pumpkin 3 cups flour 2 txp baking soda 1 tsp cinnamon 3/4 tsp salt 1/2 tsp baking powder
1. Heat oven 350. Grease bottom only of 11 minaiture loaf pans
2. Mix sugar, oil, vanilla, eggs and pumpkin. Stir in remaining ingredients. Divide batter into 11 mini pans (about 1/2 cup each)
3. Bake 25-30 minures. Cool 10 minutes then remove from pan. Wrap tightly and store room temp up to 4 days, or refrigerate up to 10 days.

I like and enjoy most breads....Just had two pumkin bread loves at Thanksgiving.
