My dad use to fish for carp all the time due to the fight they put up. They are also good to eat if you fix them right. Cut the filets off, then score them every 1/4 of an inch almost all the way through, put them in a baking pan with your seasonings on and a big spoon full of grease. Then cook them at 375 for around 35 minutes or until they float on the grease. This way all the bones have desolved and you can just eat them and not worry. To me they taste a lot like bluegill.
