I was looking through a gardening book the other day. It explained how potatoes that have green are poison. I never knew that!!! Looked it up online, and it's true!!! We like to start eating on our red potatoes while they are new (small). Didn't know we have to be careful of poison.

The green part is all you have to be concerned about. Just cut it away like you do an eye an the rest is good. I have never seen green on a red potato so I don't think you need to worry.

When they say green, they aren't talking about young potatoes, potatoes are a root they don't ripen like a fruit. the green they are talking about comes from part of the potato being exposed to sunlight. it causes the potato to become extremely alkali which is dangerous to consume. Dave

dave has it exactly right. I didn't know what the reason was, though, just that it was toxic. Thanks for the full explanation. Ever since I learned that, though, I have been extra careful to cut the green part off of the potatoes. I sure hope that when food services cook our potatoes, they do the same. I have found frozen French fries with green on some of them. Found one bag with quite a few, so I just cut my own and don't buy the frozen ones any more.

Yep!! It's true.. That is why it is recommended to cover the row with straw once the plant breaks through the ground and reaches about 4 inches tall..
