This is the recipe that got me talking to this feller. Looked really good, and I gonna try it soon as I start catching fish again.

This time I give my fish fillets an Asian flare. If you have larger fish fillets, like walleye or tilapia, add a minute or two to the simmering time until fish flakes easily with a fork.This recipe is very simple, believe me; I can't do complicated. Any comments or suggestions are most welcome. Here is the complete recipe:
Ingredients:
1/2 cup soy sauce
2 TBS of Szechuan Spicy Stir-Fry Sauce
3 TBS of sugar or equivalent
1/4 teaspoon garlic powder
2-3 TBS peeled, minced, fresh ginger
2/3 cup of water
1 to 2 pounds of fish fillets
1/2 cup of fish-fry breading (or cornflour with salt & pepper)
1/3 cup of vegetable oil for cooking
2 or 3 large green onions chopped
Instructions:
1. Fillets should be wet
2. In a small bowl mix the first six ingredients.
3. Heat skillet over medium high heat
4. Add vegetable oil to skillet
5. Put breading in a one gallon plastic bag.
6. Add the fish to the bag and coat the fillets thoroughly
7. Put the breaded fillets onto clean plate
9. Add fillets to hot oil and cook until slightly brown, about a minute
10. Turn over fillets and brown on other side for another minute
11. Turn heat down to medium
12. Pour in the soy sauce mixture
13. Turn fish over one last time
14. Cover pan and let it simmer about 3-4 minutes more
15. Transfer fillets to serving platter and pour sauce over top
16. Sprinkle green onions over the top
