Oh boy oh boy oh boy, those are really really good, and really easy to make. I might have to make them often. I do know that the next time I'm going to add diced Jalepoenos and see how it comes out. Dave

I just finished a big plate of homemade red beans and rice, and catfish fillets. I could eat either one all the time and be happy. Dave

You've been eating lots of fish. I am trying to make fish once a week. I have some recipes for baked fish, I am wanting to try out
Having meatloaf tonight. Granddaughter has been asking me to make it. Said she loves my meatloaf. But I have several different recipes, don't know which one she is talking about. She don't either.

I made Meatloaf and Baked Taters for all the Moms in the Family on Sunday, My Family loves my meatloaf, and I love cooking so it worked out well. Dave

I hate meatloaf. No matter how hard I have tried over the years, I just can't learn to like it. My mom tried a meatloaf recipe once that I actually did like, but it was the only one I ever did. It was made with sour cream mixed into it. But even then, I really had to be in the mood for it. I do kind of like meatloaf after it gets cold, sliced thin and slapped between two slices of bread with a little ketchup. Tonight, it was a Mexican beans & rice TV dinner. One of those healthy ones. It was really pretty good.

It's nice to know someone else who hates meatloaf. I never liked it either, but learned to tolerate it because everyone loves it so much. I always make sure I make good veggies , bread or dessert when I make meatloaf so I don't have to eat much of the meatloaf.

Tonight is going to be a Dagwood sized Tomato and Mayo sandwich on soft, bakery, all-natural multi grain bread. And of course a little sprinkle of sea salt on the tomato. I had been craving a tomato and mayo sandwich hard, and I wanted a true, vine ripe tomato. None to be found around here due to the drought, only the hard, flavorless shipped in ones. So I went to our local produce market (not farmers market) and they had gone somewhere where there had been rain and gotten some big, juicy, ripe on the vine tomatoes. The kind that you don't even have to chew, they just melt in your mouth as you smush them around a bit, and the juice runs down your arms to your elbows.
Not telling what I had to pay for them, though. I don't normally do that, but I chalked it up to my summer treat, justified it because the bread was half price, and I am truly enjoying them, rather than sitting here with a hard, no-flavor, wannabe tomato and wishing I had splurged on the juicy ripe ones.

I've been lucky enough to be eating vine ripe tomatoes every day lately, we have a bunch. they are small and a lot of them split because of too much water and heat, but we are still enjoying them. We haven't had too many days this year without rain in some amount or another. combine that with the heat and we have a bumper crop of tomatoes, we just have to put up with them splitting because of the excess water. My peppers are doing really well also, been eating lots of hot peppers and green peppers. Dave

That is good, Dave. I have given up on mine here. Lots of them but are splitting while still green . Not getting very big either.

Have a roast and taters in the oven. Gonna fix up some yellow squash, zucchini, and onions to go with it.
