Depends on what you cooked in it MC, least that's my experience. For fish or shrimp, I only use a couple of times, but for fries and such, I use more often. I strain it after cooking, get all the bits and pieces out, put it back in the deep fryer and store it covered. Have kept it for quite awhile, but can't say exactly how long as it always varies depending on what kind of use I'm putting it to. When it smells bad, or starts getting cloudy, etc, time to change it.

Fries and chicken nuggets is all..Still looks clear and very little "drippings" in it. Has no smell and is always covered when not in use.

If its been sitting, don't stir it up and pour it into a clean container. Then clean the crumbs and gunk outta the pot. Then pour the oil back in. Otherwise, I'd suggest pourin it thru some sorta strainer. It strains easier when its warm. Change it when it starts to turn dark. Or smells funny. Or looks like 50 weight used oil. (hopefully long before that) I sometimes pour back into its container. I have a jug of once used fish oil and a jug of chicken oil. I don't believe everything tastes like chicken. Perty much same thing Buzz said.
